Guy’s Grilled Buffalo Wings

Ingredients

Brine:

  • 2 qts water
  • ½ cup kosher salt
  • ½ cup brown sugar
  • 4–5 bay leaves
  • ½ cup garlic cloves, whole peeled
  • 2 tsp. black peppercorns
  • 2 tbsp. rosemary, fresh
  • 2 tbsp. thyme, fresh
  • 2 tbsp. parsley, fresh
  • 1 lb lemons, halved
  • 1 ga; ice cubes

Buffalo Wing Sauce:

  • 1 tbsp. minced garlic
  • 1 (12-oz.) bottle hot pepper sauce
  • 4 tbsp. unsalted butter
  • 1 tbsp. white vinegar
  • salt and pepper, to taste

Wing Rub:

  • ¼ cup paprika
  • ¼ cup cumin
  • ¼ cup granulated garlic
  • ½ cup kosher salt
  • ½ cup ground black pepper
  • 1 tbsp. oregano, dried

Other Ingredients:

  • 5 lb. fresh chicken wings

1 Food Prep

  • BRINE: Cut lemons in half and place them in a stock pot. Place all of your Brine ingredients in the pot and cover, bringing it to a boil. Continue to boil for 1 minute while stirring to mix in the ingredients and dissolve the salt. Strain your brine into a large container using a fine mesh strainer. Add the ice to the strained brine and stir to fully dissolve, then refrigerate. Only once your brine is cold, ​​add your chicken wings and refrigerate for 8 hours, or overnight.

  • BUFFALO WING SAUCE: In a sauce pot over medium heat, add your butter and melt it, making sure not to let it brown. Add your hot sauce, vinegar and garlic, mixing to combine. Add salt and pepper to your liking. Allow your wing sauce to cool to room temperature, then refrigerate.

  • WING RUB: Place all of your Wing Rub ingredients into a bowl and mix thoroughly. Cover it and place it to the side. Just before grilling, remove your chicken wings from the brine and pat them dry. Lay your wings on a sheet pan and coat them generously with the wing rub (or your favorite dry rub), making sure to coat all sides evenly.

  • When you’re at temp, put cooking oil on a folded paper towel. Grab the oiled paper towel with long-handled tongs and oil the grate thoroughly.
  • Place your wings on the cooler side of the grate, away from the coals, and close the lid. Cook for 12–15 minutes to render the fat and cook your wings through. Turn once while cooking.

  • While your wings are cooking, reheat your buffalo wing sauce and set it to the side.
  • When your wings have reached an internal temperature of 175ºF, move them to the direct heat side of the grate, so they’re directly over the coals. Turn your wings frequently until well charred.
  • Add your wings to a large mixing bowl and pour in the warm buffalo sauce. Toss until thoroughly coated.
  • Serve your buffalo wings with celery, carrots, and your favorite blue cheese or ranch dipping sauce.
