Guy’s Grilled Cheeseburger

Cooking for 4 people


Donkey Sauce:

  • ¼ cup roasted garlic
  • 1 cup mayonnaise
  • 1 tsp. yellow mustard
  • 4 dashes Worcestershire sauce
  • kosher salt and freshly ground pepper, to taste

Other Ingredients:

  • 2 lb. 80/20 ground beef
  • 4 brioche buns
  • 1 lb. unsalted butter
  • 4–6 cloves garlic, minced
  • kosher salt
  • 8 slices cheddar cheese

Cheeseburger Topping:

  • 1 large beefsteak tomato
  • 1 small yellow onion
  • 2 kosher dill pickles, whole
  • 1 head iceberg lettuce

1 Food Prep

  • In a mixing bowl, combine your Donkey Sauce ingredients and mix thoroughly with a whisk until combined, seasoning with salt and pepper to your liking.

  • Transfer your sauce to a container and place in the refrigerator until ready to use.

  • For your Garlic Butter, start by melting your butter in a small sauce pot over low heat. Once melted, add your garlic cloves. Cook your garlic in the butter on low heat until completely soft and lightly browned.

  • Thinly slice your lettuce, tomato, onion, pickles and other burger toppings, and place them in the refrigerator until ready to use.

  • Just before grilling, form your ground beef into 4, 8 oz. patties. Flatten each patty to a ½-inch thickness, with a slight dimple in center.

  • When you’re at temp, put cooking oil on a folded paper towel. Grab the oiled paper towel with long-handled tongs and oil the grate thoroughly.

  • Season your burger patties with salt on both sides, then place them on the grill over high heat. Cook for 3–4 minutes until they reach an internal temperature of 160°F.

  • Turn your burgers and add 2 slices of cheese to each patty. Close the lid and melt your cheese for about 30 seconds. Place your cheeseburgers on a sheet pan while you prepare the buns.

  • Brush the buns with garlic butter and toast them, flipping them over to toast both sides.

  • To assemble: Smother 2 tbsp. of Donkey Sauce onto both sides of the buns, and starting from the bottom assemble as follows: pickles, onion, burger, tomato, lettuce and top bun. Enjoy!
