Generously season lamb with salt, pepper and paprika.

Method: Direct-Heat Grilling
Temp: Medium-High Heat
3The Cook
Place lamb lollipops on preheated grill for 3 to 4 minutes per side, or until they reach an internal temp of 130–135°F for medium rare.
Remove from grill and allow to rest while you make your chimichurri.
For the chimichurri, place cilantro, shallot, garlic, jalapeño, red wine vinegar, extra-virgin olive oil and a pinch of salt in a food processor and blend until combined and smooth.
Optional: Serve alongside roasted Yukon gold potatoes, garnished with pea shoots and lemon wedges.
