Grilled Lamb Lollipops with a Spicy Chimichurri

Sometimes big flavor comes in small bites. Pop these on the grill for a mouthwatering meal in just 25 minutes.

Ingredients

  • 6

    lamb lollipops

  • salt

  • pepper

  • paprika

  • 1 bundle

    fresh cilantro leaves

  • 1

    shallot

  • 1

    jalapeño, seeded

  • 4 cloves

    garlic

  • cup

    red wine vinegar

  • cup

    extra-virgin olive oil


1Food Prep

    • Generously season lamb with salt, pepper and paprika.

    • Place lamb lollipops on preheated grill for 3 to 4 minutes per side, or until they reach an internal temp of 130–135°F for medium rare.

    • Remove from grill and allow to rest while you make your chimichurri.

    • For the chimichurri, place cilantro, shallot, garlic, jalapeño, red wine vinegar, extra-virgin olive oil and a pinch of salt in a food processor and blend until combined and smooth.

    • Optional: Serve alongside roasted Yukon gold potatoes, garnished with pea shoots and lemon wedges.
