
Jamaican Jerk Ribs

Ingredients
- 1 tablespoon brown sugar
- 1 tablespoon ground black pepper
- 2 teaspoons allspice
- 2 teaspoons dried thyme
- 2 teaspoons onion powder
- 2 teaspoons granulated garlic
- 2 teaspoons kosher salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 2 slabs St. Louis spare ribs
Instructions
- Combine the first 11 ingredients in a large bowl and blend well. Remove the membrane from the ribs and season liberally on both sides with the jerk dry rub.
- Prepare smoker or grill for indirect cooking, adding 3–4 of your favorite wood chunks to the charcoal briquets. Adjust smoker or grill vents to bring the temperature to approximately 250°F. Place ribs on the smoker or grill, cover and allow them to cook until tender, approximately 4–4½ hours. Remove from heat and serve.
