Smoked Georgia Peach Cobbler

  • 1 stick butter
  • 1 cup all-purpose flour
  • 1½ cups sugar
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 4 fresh peaches
  • 1 tablespoon lemon juice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon Ray's Warm Apple Pie Rub
  • 1 pinch salt


  1. Pre-heat recteq to 375°F.
  2. Combine 1 cup flour, ¾ cup sugar, baking powder and salt in a bowl. Add milk and stir until the dry ingredients are incorporated. Set aside.
  3. Wash, peel and slice peaches.
  4. Combine the remaining ¾ cup sugar, cinnamon, nutmeg, lemon juice, Ray’s Warm Apple Pie Rub and peaches and mix well.
  5. Melt the stick of butter in a large 12” cast iron pan on the grill. Add the peaches mixture to cast iron pan and heat until all the sugar melts together.
  6. Pour flour/milk mixture on top of peaches in the cast iron pan. Sprinkle additional apple pie rub to your liking.
  7. Do not stir, as the cobbler will form a crust around the fruit.
  8. Cook cobbler for 30–45 minutes until golden brown.
  9. Serve with a scoop of your favorite ice cream.
