Smoked Georgia Peach Cobbler

Ingredients

  • 1 stick butter
  • 1 cup all-purpose flour
  • 1½ cups sugar
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 4 fresh peaches
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon Ray's Warm Apple Pie Rub
  • 1 pinch salt

Instructions

  1. Wash, peel, and slice peaches.
  2. Combine 1 cup flour, ¾ cup sugar, baking powder, and salt in a bow.l
  3. Combine the remaining ¾ cup sugar, cinnamon, nutmeg, lemon juice, and peaches in a cast iron skillet and heat until the sugar melts and everything is incorporated.
  4. Melt the stick of butter in a large 12” cast iron pan.
  5. Combine 1 cup flour, ¾ cup sugar, baking powder, and salt in a bowl.
  6. Add milk and stir until the dry ingredients are incorporated.
  7. Combine the remaining ¾ cup sugar, cinnamon, nutmeg, lemon juice, and peaches in a cast iron skillet and heat until the sugar melts and everything is incorporated.
  8. Pour flour/milk mixture on top of peaches in the cast iron pan.
  9. Do not stir, as the cobbler will form a crust around the fruit.
  10. Pre-heat recteq grill or wood pellet grill to 375°F and place on grill.
  11. Cook cobbler for 30–45 minutes until golden brown.
  12. Serve with a scoop of your favorite ice cream.
